Tonight I went into a cooking frenzy. Lately my mind has been going crazy with combinations, mostly for food and clothes but it's great because I feel I am really exercising the creative part of my brain. Tonight I made 3 easy, cheap and healthy, carb-less and sugar-less recipes. Here they are and I hope you enjoy them, I certainly did : )
Tuna salad
(So easy it's not even funny)
1 whole continental cucumber chopped
1 punnet of cherry tomatoes chopped in half
2 medium cans of drained tuna in brine
Drizzle of olive oil
Drizzle of balsamic
Mix it all together and done...lunch tomorrow
Cauliflower soup
1 brown onion chopped
1 bunch of cauliflower broken up into little sections (cut the stem off and throw away)
Salt reduced chicken stock
Drizzle of Olive oil
Put onions and drizzle olive oil into large pot and cook until onions are soft. Add cauliflower into pot. Pour stock in so it is in line with the top of the cauliflower. Stir and cover with lid to simmer. After about 20 mins, the cauliflower should be soft. Turn of stove and get an electric mixer and mix until soup texture. Perfect healthy winter warmer and you can basically use any vegetable.
Cocoa balls
1 pack of Slivered almonds
1 jar of almond and chia spread
Shredded coconut
A tablespoon of coconut oil
Handful of pitted dates
Cocoa powder
Empty almonds, jar of spread, coconut oil and broken up dates into a mixing bowl. With electric mixer, mix until texture is consistent. Add cocoa and kneed until texture is firm enough to roll into balls. Put shredded coconut into a separate bowl. Grab a teaspoon of cocoa mix and roll it into a ball, cover in shredded coconut and viola...cocoa ball. Repeat until all the mixture is gone : ). This recipe has inspired me for a healthy take on Australia's famous Anzac cookies that I will make for upcoming Anzac day on Thursday. I will make the cookies with live and in honour of the wonderful Anzacs. Until then...Bon appetite : )
